🍜 Chicken Chow Mein Recipe (Serves 2–3)

For the noodles & stir-fry:
200g egg noodles (dried or fresh)
1 large chicken breast (sliced thinly)
1 carrot (julienned or thinly sliced)
1 bell pepper (any colour, sliced)
100g bean sprouts (optional)
2 spring onions (sliced)
2–3 tbsp vegetable oil (for frying)
For the marinade:
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp cornflour (cornstarch)
Pinch of white pepper (optional)
For the chow mein sauce:
2 tbsp light soy sauce
1 tbsp dark soy sauce (for colour)
1 tbsp oyster sauce
1 tsp sugar
1 tsp sesame oil
2 tbsp water

👨🍳 Instructions:
1. Prep the chicken:
Slice the chicken thinly.
In a bowl, mix with light soy sauce, sesame oil, cornflour, and a little white pepper.
Let it marinate while you prep everything else (10–15 mins is enough).
2. Cook the noodles:
Boil egg noodles per packet instructions until just cooked (al dente).
Drain and toss with a drop of sesame oil to prevent sticking.
3. Mix the sauce:
In a small bowl, mix all the sauce ingredients: light soy, dark soy, oyster sauce, sugar, sesame oil, water. Set aside.
4. Stir-fry time:
Heat a wok or large frying pan over high heat.
Add 1 tbsp oil, then cook the chicken until browned and cooked through. Remove and set aside.
In the same pan, add a bit more oil if needed. Stir-fry carrots and peppers for 2 mins.
Add the cooked noodles, return the chicken, pour in the chow mein sauce, and toss everything together.
Finally, add bean sprouts and spring onions, stir-fry for another 1–2 mins.
5. Serve:
Plate it hot with a sprinkle of sesame seeds or extra spring onions if you like.
